Vegan Fruit Pizza
My friend Naomi makes an amazing fruit pizza and I decided to try to veganize the recipe. My vegan version turned out amazingly delicious and was also super easy.
INGREDIENTS
- cookie crust (recipe below)
- 1/3 cup sugar (or maybe a bit less to taste)
- 1/4 teaspoon vanilla
- 8 oz package vegan cream cheese (Tofutti makes a great one)
- sliced fruit (strawberries, kiwi, banana, pineapple, etc.)
DIRECTIONS
- Mix the sugar, cream cheese, and vanilla until smooth.
- Once the cookie crust is completely cooled, spread the cream cheese mixture on top like pizza sauce and then top with sliced fruit.
- Best if served immediately but it can be stored in the refrigerator overnight. (If storing overnight, I recommend storing the crust and cream cheese mixture separately and adding it the next day so that the crust doesn’t get too soft. The crust doesn’t need to be stored in the refrigerator.)
Cookie Crust
INGREDIENTS
- 2 cups flour
- 3/4 cups sugar
- 1 teaspoon baking powder
- 1/4 cup applesauce
- 1/2 cup oil
- 1 tablespoon vanilla extract
- dash of cinnamon (optional)
DIRECTIONS
- Preheat oven to 350 degrees.
- In a medium sized bowl mix together flour, sugar, baking powder, and cinnamon set aside.
- In another bowl, mix together wet ingredients.
- Add the wet ingredients to the dry ingredients.
- Make into the shape of a pizza or a pie crust. Bake in a pie pan or on a cookie sheet for about 15 minutes or until done and slightly crispy.
