Vegan Chocolate Cupcakes with Creme de Menthe Frosting
INGREDIENTS (Cupcakes) 3 c flour 2 c sugar 1/2 c apple sauce 2 tsp baking soda 1 c soy milk 1 c cocoa powder 3/4 c vegetable oil 1 tsp salt 2 tsp vanilla extract 1 tsp almond extract 1 c boiling water INGREDIENTS (Frosting) 4-5 c powdered sugar 2-3 tbsp soy milk (or soy creamer) 4-6 tbsp vegan butter 2-3 tbsp creme de menthe (or to desired taste/consistency) DIRECTIONS Preheat oven to 350 degrees. Mix cupcake ingredients. Bake cupcakes (use cupcake papers or spray the muffin tin with oil) for 20-30 minutes (test them with a fork or a toothpick!). Mix frosting ingredients. Frost the cupcakes. Eat them.
