Homemade Pizza (Vegan and Traditional)
INGREDIENTS
2 ½ cups all-purpose flour (or pastry flour)
1 cup lukewarm water
1 tablespoon yeast
1 teaspoon salt
4 tablespoons vegetable oil (can substitute olive oil or vegan butter or apple sauce)
herbs/spices (optional)
DIRECTIONS
Preheat oven 425 degrees.
Mix the yeast with lukewarm water until the yeast is dissolved. Let it stand for a few minutes.
Add the salt and vegetable oil and mix....

My friend Naomi makes an amazing fruit pizza and I decided to try to veganize the recipe. My vegan version turned out amazingly delicious and was also super easy. INGREDIENTS

8 oz package vegan cream cheese (Tofutti makes a great one)

BUTTERNUT SQUASH LASAGNA WITH GOAT CHEESE AND HAZELNUTS
INGREDIENTS
1 packaga lasagna noodles
2 lbs. butternut squash, cooked/soft
1 tub part-skim ricotta cheese
1/4 tsp. nutmeg
½ tsp. dried thyme
1 ½ tsp. dried sage
¼ tsp. black pepper
¼ c. butter
¼ c. flour
2 c. milk, heated but not boiling
1-2 c. mushrooms, sliced
1-2 handfuls hazelnuts
2-3 oz. soft goat cheese
